Why This Dish

Most avocado toast is a blank canvas. This one is not. The avocado is Florida-grown, the egg is from a named local farm, the bread is griddled in butter until the edges crisp, and the finish is chili flake and flaky sea salt — nothing more. It is the spring board's quietest dish and one of its most honest: two local ingredients, a short method, and a plate that does not need explaining.

Florida avocados are larger, with a higher oil content and a milder, almost nutty flavor compared with the Hass variety most people know. They are in season through the warmer months and pair cleanly with a soft-yolk farm egg. The griddle step on the sourdough is the only technique that matters: the butter must be hot enough to leave a golden crust without soaking the crumb.

Avocado Toast — FAQ

What is in Avocado Toast — Farm Edition?

Two ripe Florida avocados mashed with lemon and salt, four slices of sourdough griddled in butter, four fried farm eggs, chili flake and flaky sea salt. That is the entire plate.

Where do the avocados and eggs come from?

The menu's sourcing line names Swank Specialty Produce for the Florida avocado and Charmed Life Farm for the eggs. Both are Palm Beach County suppliers.

Is this dish vegetarian?

It contains eggs and butter, so it is vegetarian but not vegan. A vegan version would omit the egg and use oil for the griddle step; the avocado mash itself is plant-based.

Can you serve this at a private event or wedding?

Yes. It is a fast, clean plate that works well for brunch-style bookings. America is a licensed Mobile Food Dispensing Vehicle (MFD1654011). Call (561) 779-3213 to discuss dates and guest count.

Why Florida avocado instead of Hass?

Florida avocados are larger, higher in oil, and milder — almost nutty — compared with the Hass variety. They are what grows here in the warmer months, so they are the honest choice for a farm-to-table spring board.

How do I know the avocado is ripe enough?

It should yield gently to pressure without feeling mushy. Florida avocados can be larger and sometimes firmer than Hass; if it is still hard, leave it on the counter a day or two. For the truck we buy them ready to mash the day we serve.
